Tomato Basil Soup Ingredients

  • 8 Roma Tomatoes – sliced in half
  • 1/2 white onion
  • 1 carrot – cut in thirds
  • Fresh basil
  • 4 garlic cloves
  • 8 oz can tomato sauce
  • 1 tbsp tomato sauce
  • Thyme leaves
  • 2 cups Vegetable broth
  • 1 tbsp red wine vinegar
  • 1 cup heavy cream
  • Sea salt & pepper
  • Olive oil
  • 1/4 stick butter

Roast tomatoes, onion, olive oil, garlic and carrot in a large pot until tomatoes turn soft.

Add broth, basil, thyme, butter. Simmer for 30 minutes

Add heavy whipping cream and salt & pepper to taste.

Blend thoroughly. Return to pot and simmer for 10 minutes. Garnish with basil leaves.
